How we make wine

From vine to bottle,
with patience and care

Our wines come from our own outstanding vineyard sites in the Pannonhalma Wine Region. We take great care of our vines, work gently in the cellar and give every wine the time it needs — so that the honest character of the landscape shines through in the glass.

From the 8 grape varieties grown in our vineyards we make a wide and colourful range of wines, from fresh, reductive whites and aromatic rosés to elegant barrel-aged wines and characterful reds.

Our methods

What makes our wine ours

A few principles we hold to in every vintage.

Harvest

Healthy bunches, picked at just the right ripeness.

Reductive winemaking

Cool, controlled fermentation to preserve fresh fruit character and lively acidity.

Barrel ageing

Selected wines mature in wooden barrels for depth and complexity.

Patience and care

We give every step of the winemaking process the time and attention it needs.

White wines

Fresh reductive styles and elegant barrel-aged wines

We make our reductive white wines with cool fermentation, preserving their fruity aromas and fresh acidity. Every year we make a fuller-bodied, more complex barrique-aged Chardonnay, and we have also made barrel-aged Welschriesling and Rhine Riesling in the past.

Rosé wines

Aromatic, fresh and fruity

MerlotZweigelt

Our rosés are made with brief skin contact: after destemming, we press the grapes almost immediately. With their vivid red-fruit aromas and crisp acidity, they are light, summery wines that are delightful both on their own and with food.

Red wines

Characterful, matured wines

MerlotZweigelt

Our red wines are made by traditional fermentation on the skins and, in most cases, then aged in wooden barrels. We make sure each wine spends just the right amount of time in barrel, so that pronounced oak notes never overpower the fruit. Full flavour, fine tannins and a long finish.
